On the occasion of Earth Day, Mottolini S.r.l. Società Benefit shares its ongoing journey towards a more conscious and responsible approach to energy management, an essential element in a production process such as bresaola, which requires constant and carefully controlled conditions 24 hours a day.
Last year, more than half of the company’s total energy demand was covered through internal production: 54% of the energy used was self-generated, while the remaining share was sourced externally, entirely from certified renewable sources.
This self-generated energy comes from an integrated system that combines efficiency and sustainability. Around 75% is derived from cogeneration, with recovered thermal energy reused within production processes, while the remaining 25% is generated by photovoltaic systems. Approximately 7% of this energy is also fed back into the grid, contributing to the overall energy system.
Production processes themselves play a key role. The ageing rooms, which require constant temperature and humidity levels, are equipped with heat exchange systems that recover thermal energy removed during refrigeration and reuse it in the drying phases, significantly reducing waste.
This approach is not a recent development. The company’s first photovoltaic system dates back to 2010, driven by the need to combine production growth with a responsible approach to environmental impact.
Today, this journey continues through further investments. In 2026, Mottolini expects a significant increase in the share of self-generated energy, supported by the expansion of its solar power capacity and the enhancement of energy storage systems. These improvements will allow energy to be used even during nighttime hours or in periods of lower solar irradiation. The goal is to triple the contribution of renewable sources to total energy demand and further strengthen the company’s energy independence, also through the introduction of solar thermal solutions for heat generation.
This is a concrete commitment, part of a broader path. With its recent transition to a Società Benefit, Mottolini has formally embedded environmental and social objectives into its corporate charter, integrating them into its growth model.
